Rhubarb is a vegetable, isn't it?
Springtime is rhubarb time: as soon as the sweet and tart stalks appear in the market alongside strawberries and asparagus, summer is just around the corner. Because rhubarb is often used in cakes, cooked into compote or jam, or drunk as a refreshing lemonade, it is frequently considered a fruit. However, it is actually a member of the knotweed family, which is classified as a vegetable.
This greenish to red vegetable originally comes from the Himalayan region and is particularly widespread in Asia. A distinction is made between green and red rhubarb. The redder the rhubarb, the less sour it tastes.
Rhubarb is a great energy booster and incredibly healthy
Rhubarb not only tastes delicious – it's also incredibly healthy: This vegetable contains only 14 kilocalories per 100 grams and is completely fat-free. Its tart flavor comes from the high levels of malic, citric, and oxalic acid. Furthermore, the high potassium content of rhubarb contributes to healthy blood pressure. Perfect for enjoying in a non-alcoholic rhubarb cocktail.
