Non-alcoholic Aperol Sour - with Laori Ruby No 4
Did you know that you can mix a perfect sour with Aperol? One of our favorite drinks for years. Unfortunately, this no longer applies as alcohol consumption decreases. With Laori Ruby No 4 you can mix this delicious temptation, easy peasy, alcohol-free.
This is how the recipe for non-alcoholic Aperol Sour works:
- 6 cl Laori Ruby No 4
- 3 cl lemon juice
- 2 cl sugar syrup
- Optional for the perfect foam crown: 1 egg white
Pour all ingredients into a shaker with ice and shake the drink vigorously. Serve over ice and enjoy quickly.

You can get the perfect foamy head with an egg white. Do you prefer a vegan version or don't like fresh ice in your drink? You can leave out the egg whites, replace them with aquafaba (chickpea water), or buy egg white substitutes for your bar. Then add all the ingredients into a shaker and shake without ice - a so-called dry shake. Then shake the whole thing again with ice until you have really nice foam. Strain the whole thing through a bar strainer.
